Vicki grew up on a farm in southwest Kansas and still enjoys living out in the country, west of Beatrice. She is married to Jim Ensz and relishes living close to her grandchildren. She is a member of First Mennonite Church and is involved in various committees and activities of the church.
Other activities include serving on the Ten Thousand Villages board, volunteering for Meals on Wheels, former board member and past president of Board of Directors for NETA (Nebraska Educational Technology Association), and enjoys traveling, golfing, and reading.
